Delicious, simple egg bakes breakfast the easy way

Holiday entertaining can be exhausting, so when it comes to an easy laidback breakfast the morning after Christmas or New Year's Eve, nothing says it better than a simple, satisfying egg bake and warm caramel rolls.

The following two recipes easily fit the bill in all categories. Instead of served on the side, the hearty egg casserole has the hash browns incorporated right into it. Accented by the onions and green peppers it doesn't get any better, unless you can think of other ingredients you'd like to include. Mushrooms would be good as well as other meat or cheese choices, use whatever you like, just make sure you have enough liquid from the egg to make for a moist, tender end product.

The gooey melt-in-your mouth Monkey Bread doesn't get any easier, relying on the canned baking powder biscuits as its base topped with equal amounts of sugar, butter and ice cream, resulting in rich and delicious rolls, even more so when you top them with a little more softened butter when eating.

To round out your meal serve a tray of varied fresh fruit or a couple of different pitchers of well-chilled fruit juice, i.e. orange, pineapple, tomato, or whatever you prefer.

All very simple, but the ultimate breakfast meal without a lot of time invested.

Egg and Hash Brown Casserole

6 eggs, well beaten

1 can (12 fl. oz.) evaporated milk

1 tsp. salt

½ tsp. pepper

1 pkg. (30 oz.) frozen shredded hash brown potatoes

2 cups shredded Cheddar cheese

1 medium onion, chopped fine

1 small green pepper, chopped fine

1 cup diced ham, or any other kind of meat (optional)

Preheat oven to 350 degrees. Grease 13x9 inch baking dish. Beat eggs in large bowl until well blended. Stir in milk, salt and pepper. Add potatoes, cheese, onion, green pepper and ham. Mix well. Pour into dish and bake for 60 to 65 minutes or until set. Serves ten easily.

Monkey Bread

3 pkgs. Buttermilk refrigerator biscuits

Cut each circle into four pieces. Put in greased 9x13 inch pan. Sprinkle over ¼ cup white sugar and 1 tsp. cinnamon mixed together.

Melt in microwave:

½ cup white sugar

½ cup brown sugar

½ cup butter or margarine

½ cup vanilla ice cream

Pour above mixture over and bake 20-30 minutes in 350 degree oven. Tip pan over on tin foil right after they are baked.
