Eating Well: Easier than baking cookies, macadamia bars every bit as delicious
It really doesn’t get any easier than this White Chocolate Macadamia Nut Bar recipe.
Will Foss in our office told me how delicious they were after eating one at an office potluck.
The bars were made by Anne Malvin who very willingly shared the recipe.
I have already prepared them twice and they are indeed every bit as good as they sound.
The first time I used the Sugar Cookie Mix (Betty Crocker) and the second time I saw the Macadamia Cookie mix and thought I would try that and skipped adding the nuts called for.
The sugar cookie mix worked a little better because the mix size was a little larger making for a thicker bar, so the next time I make them it will be back to the sugar cookie mix base.
Be sure to watch the bars closely as they bake so they don’t get too done. You just want them a nice light golden brown so they stay moist and chewy.
White Chocolate Macadamia Nut Bars
1 package sugar cookie mix (prepared according to instructions with butter or margarine and egg)
1 cup macadamia nuts
1 cup coconut
1 cup white chocolate chips
Prepare sugar cookie mix according to the package instructions in a large bowl. Pour in the nuts, coconut and white chocolate chips and stir together well. Smooth dough into well-greased 9 x 13 cake pan. Bake at 375 degrees for 15 to 20 minutes. Yummy!!!!
