HARVEST PUMPKIN APPLE BREAD

3 cups flour

2 tsp. cinnamon

2 tsp. baking soda

1 1/2 tsp. salt

15 ounce can of pumpkin

4 eggs

1 cup vegetable oil

1/2 cup apple juice or water

1 large baking apple, peeled, cored & diced

Combine flour, cinnamon, baking soda and salt in a large bowl. Combine sugar, pumpkin, eggs, vegetable oil and apple juice in a large mixing bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir until moistened. Fold in apple; spoon batter into 2 prepared loaf pans. Bake in a 350 degree oven for 65 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes, then remove from pans and cool completely on wire racks.
