Good for topping angel food cake
4 egg yolks, beaten
1 cup granulated sugar
Juice of 2 oranges and grated rind of 1/2 orange
1/2 cup fine coconut
1 cup heavy whipping cream, whipped
Cook egg yolks, sugar, orange juice and rind over hot water until thick. Cool. Fold in 1/2 cup fine coconut and whipped cream before serving.
