Speedway Restaurant: Longtime business being converted into Legend's Bar and Grill
It's business as usual at West Fargo's Speedway Restaurant even though a major remodeling project is underway that will ultimately result in a big change and a brand new name - Legend's Bar and Grill.
Owner-manager Kari Wehri is shooting for an April 1 completion date at which time a grand reopening celebration will be held to acquaint everyone with the new facility.
The renovation is focusing on a complete separation of the lounge and restaurant areas of the business, an idea that was in the works when Wehri took over operation of the longtime eatery two-and-a-half years ago.
"This is the next phase. We really want to make the business our own," Wehri said. "I'm a little bit nervous but very excited about the new challenge. After all this time, I feel like we have a better grasp of what our customers would like. A majority of our original employees are still with us, we understand each other, and feel everybody is going to enjoy this new change that we are all embracing."
The name, Legend's Bar and Grill, is the evolution of an original legacy-related theme. "We want our family-oriented business to be our legacy," Wehri said, with a variety of family members involved in the business, including her mother and grandmother, who both coordinate various aspects. "It's like building your own legacy, which is what we call kind of strive to do."
On that note, she also plans to incorporate famous local people in the décor, whether from the area of business, sports, or whatever the connection; with the lounge area taking on more of a sports bar atmosphere.
The menu will also take a little bit different direction, while still retaining many of the popular favorites customers have grown to expect and appreciate.
The focal point will be on building made-to-order sandwiches from only the freshest and most varied assortment of ingredients possible, including meats freshly smoked in house at the restaurant, i.e. pulled pork, pastrami, etc.
The menu will offer less steak items, but continue to still feature the restaurant's famous barbecued ribs, and an assortment of basket specialties, including the ever-popular fish basket, which continues to be one of the restaurant's top sellers.
An end result will also be a much larger area for entertainment, with ample room for live music.
The adjacent Events Center, being utilized for larger events and receptions, will also operate under the new Legend's name.
Details about the grand opening celebration will be forthcoming as the project progresses.
In the meantime, hours will remain the same at the restaurant during the construction process: 11 a.m. to 9 p.m., Monday through Wednesday; 11 a.m. to 11 p.m., Thursday and Friday; 4 to 9 p.m. Saturday; and closed Sunday.
