Elaine Eicholtz, 80, West Fargo, died on Thursday, Aug. 26, 2010 at Bethany on 42nd, Fargo.
Elaine Joan Peterson was born on April 13, 1930 at Rockford, Ill. to Gilbert and Neltha (Lohr) Peterson. She graduated from high school in Davenport, N.D. On Dec. 12, 1949, Elaine married Earl A. Eicholtz at Moorhead. They made their home near Sheldon, N.D., where they farmed. They lived in Harwood, N.D. for a few years before moving to West Fargo in 1965. They operated Elaine’s Lefse business in West Fargo, delivering to retail outlets in the area. For 13 years, they wintered in Mesa, Ariz. Earl passed away in March of 2009.
Elaine’s grandchildren were a top priority. She loved spending time with them and watching them grow up. She enjoyed gardening over the years, playing cards and doing crossword puzzles. Socializing with friends was a priority, along with sending e-mail that made people laugh.
She is survived by four children, David (Fran) Eicholtz, Jamestown, N.D., JoAnn (Rob) Schwarz, Detroit Lakes, Minn., Debby (Kevin) Schmidt, West Fargo and Daryl Eicholtz, West Fargo; daughter-in-law, Jacque (David) Holt; eight grandchildren, Rick (Jenny) Hanson, Brian (Robyn) Eicholtz, Melissa (Philip) Krabbe, Russell Eicholtz, Amber (Matthew) Kiefat, Ryan Eicholtz, Kelsey Schmidt and Kolby Schmidt; three great-grandchildren, Thomas, Caydence and Keagen; and a brother, Arnold Peterson, Mesa, Ariz.
She was preceded in death by her parents; husband; and son, Danny.
Visitation and a memorial service were held on Saturday, Aug. 28, 2010 at the West Funeral Home Chapel, West Fargo. Burial was a Watson Cemetery, rural Leonard, N.D.
