Eating Well: Hot fudge cake satisfies chocolate craving
When a chocolate attack hits there's nothing better than a gooey Hot Fudge Cake.
This is a perfect recipe for a last minute dessert, because it doesn't require any ingredients out of the ordinary. You more than likely have all of them in your food pantry.
The smell while it's baking is outstanding, conjuring up its own hot fudge sauce, all bubbly and thick, thanks to the brown sugar and hot water that is poured on last.
I served it with Cool Whip but real whipped cream would have stepped the decadence up to the next level. The cake was absolutely delicious and amazingly not too overpowering sweet.
This recipe is better served fresh - the next day the cake portion of the dessert becomes a little bit heavier, but a few seconds in the microwave helps to the restore the freshness and the goodness.
My second 'chocolate fit favorite' is a "Crazy Cake," an extremely moist dessert that can easily be whipped up and baked in the same pan, oh so moist and delicious, especially when topped with the Chocolate Chip frosting and a big scoop of vanilla ice cream.
The time-saving part about this particular cake recipe is that you are able to frost it hot. So I usually get the frosting started just as I am taking the cake of the oven. Saves you time, if you are in a pinch.

Hot Fudge Cake
1 cup flour
¾ cup white sugar
6 tablespoons cocoa
¼ tsp. salt
1 cup brown sugar, packed
2 tsp. baking powder
½ cup milk
2 tablespoons vegetable oil
1 tsp. vanilla
1 ¾ cups hot water
Combine flour, sugar, 2 tablespoons of the cocoa, baking powder, and salt and mix together well.
Stir in milk, oil and vanilla, and blend again.
Spread in an ungreased 9 inch pan.
Combine brown sugar and the four tablespoons of cocoa and sprinkle over the batter in the pan.
Pour the hot water over all. Do not stir.
Bake at 350 degrees for 35 to 40 minutes. Serve warm, topped with whipping cream or ice cream.
Chocolate Crazy Cake
3 cups flour
2 cups white sugar
1/3 cup cocoa
2 tsp. baking soda
1 tsp. salt
2 tablespoons white vinegar
¾ cup vegetable oil
2 cups cold water
1 tsp. vanilla
Combine flour, sugar, cocoa, baking soda and salt in ungreased 9x13 pan. Make three holes in the mixture. Pour the vanilla in the first hole, the vinegar into the second, and the vegetable oil into the third. Pour cold water over all. Mix with a fork or a wire whisk until well blended. Mixture may contain some small lumps. Bake for 35 to 40 minutes in a 350 degree oven until toothpick inserted in center comes out clean. Frost with chocolate chip frosting.
Chocolate Chip Frosting
1 cup sugar
¼ cup milk
¼ cup margarine
1 cup chocolate chips
Melt ingredients in pan on stove and bring to boil and cook for 20 seconds. Take off of stove and stir in chocolate chips. Pour over cake and spread frosting evenly over cake. Great served warm with vanilla ice cream.
