Decadent hot fudge cake a real treat

Chocolate, chocolate and more gooey chocolate.

It doesn't get any better than the deliciously, decadent hot fudge cake I whipped out in about five minutes time Friday evening to serve up warm to company.

This is a perfect recipe for a last minute dessert when you are in a hurry, because it doesn't require any ingredients out of the ordinary. You are more than likely to have all of them on your pantry shelf.

The really nice aspect of the cake is that it makes its own hot fudge sauce while baking, thanks to the brown sugar and hot water that is poured on last.

I boiled my water so it was as hot as it could be and that seemed to work very well. The cake baked up in the required amount of time, and the hot fudge sauce baked to perfection, all bubbly and thick.

I served it with Cool Whip but ice cream would have been excellent. The cake was absolutely delicious and amazingly not too overpowering sweet.

It was better served fresh - the next day the cake portion of the dessert resembled a heavier pound cake, but reheated in the microwave, it was still absolutely wonderful, as was the chocolate.

The second chocolate recipe I'm sharing is for a "Crazy Cake," an extremely moist version that has been a favorite of mine for years. Mixing everything in the pan, this can also be prepared in a flash, frosted while hot and also served up warm with ice cream.

This recipe also goes by the name of "Wacky Cake," and I did read somewhere that the recipe was developed in the 1940s and was very popular due to the fact eggs, butter or milk were not a part of the ingredients.

The Chocolate Chip icing is foolproof, and again a real time-saver.

Yummy, yummy. It doesn't get any better.

Hot Fudge Cake

1 cup flour

¾ cup white sugar

6 tablespoons cocoa

¼ tsp. salt

1 cup brown sugar, packed

2 tsp. baking powder

½ cup milk

2 tablespoons vegetable oil

1 tsp. vanilla

1 ¾ cups hot water

Combine flour, sugar, 2 tablespoons of the cocoa, baking powder, and salt and mix together well.

Stir in milk, oil and vanilla, and blend again.

Spread in an ungreased 9 inch pan.

Combine brown sugar and the four tablespoons of cocoa and sprinkle over the batter in the pan.

Pour the hot water over all. Do not stir.

Bake at 350 degrees for 35 to 40 minutes. Serve warm, topped with whipping cream or ice cream.

Chocolate Crazy Cake

3 cups flour

2 cups white sugar

1/3 cup cocoa

2 tsp. baking soda

1 tsp. salt

2 tablespoons white vinegar

¾ cup vegetable oil

2 cups cold water

1 tsp. vanilla

Combine flour, sugar, cocoa, baking soda and salt in ungreased 9x13 pan. Make three holes in the mixture. Pour the vanilla in the first hole, the vinegar into the second, and the vegetable oil into the third. Pour cold water over all. Mix with a fork or a wire whisk until well blended. Mixture may contain some small lumps. Bake for 35 to 40 minutes in a 350 degree oven until toothpick inserted in center comes out clean. Frost with chocolate chip frosting.

Chocolate Chip Frosting

1 cup sugar

¼ cup milk

¼ cup margarine

1 cup chocolate chips

Melt ingredients in pan on stove and bring to boil and cook for 20 seconds. Take off of stove and stir in chocolate chips. Pour over cake and spread frosting evenly over cake. Great served warm with vanilla ice cream.
