Eating Well: Gooey chocolate bars melt in your mouth good

Staff photographer and graphic artist Carrie Snyder provided this delicious recipe this week compliments of her mother, Anne Snyder of Fargo.

Anne prepared the treat often for Carrie and her friends during their growing up years.

"They remind me of summer," Carrie said. "They were so good and gooey. My mom would send up outside with the treat where they would melt in our fingers before we could devour them and ask for more, which we always did."

After sampling the decadent four-ingredient concoction, we can understand why.

They will definitely be one of the potluck dishes I will be sharing this weekend during an early pre-Fourth of July gathering Saturday that will include a number of kids.

Chocolate Marshmallow Bars

½ cup butter (no substitutes)

1 cup chunky peanut butter

1 package semi-sweet chocolate chips

1 bag miniature marshmallows

Combine butter, peanut butter and chocolate chips. Heat until melted and smooth, either in pan on top or stove or microwave.

Put marshmallows in a greased 9x13 inch plan. Pour chocolate over until covered. Shake or jiggle plan to make sure the chocolate goes all the way through.

Refrigerate until hard enough to eat.
