Eating Well: Yummy caramel corn favorite autumn snack

This time of the year I start craving caramel corn, the ooey-gooey soft and chewy kind that literally melts in your mouth.

With one more week left in October which has become known as popcorn month, I thought it appropriate to share a caramel corn recipe that is superbly easy and ready for everyone to enjoy in simply a few minutes times.

I've literally made this version hundreds of times and the really convenient aspect is you begin with microwave popcorn so there is virtually no muss or fuss with clean-up, just throw away the empty bags, and there is extra baking of the corn in the oven as this recipe does not call for that.

A little tip. Once I've popped the corn, I pour it into a bowl and filter out all the unpopped kernels (there usually aren't many), so you are not biting on them when you are eating the caramel corn.

This is a great recipe to serve for a snack at home, a party, or if you are attending a casual potluck. Just be sure you prepare enough because once you eating it it is very difficult to stop.

Because it is habit forming and disappears quickly, I usually prepare double or triple batches, but I do them one at a time so I am guaranteed a perfect end result.

It is great to start eating immediately, but I like to let it cool just a bit. It is indeed soft and chewy as it is poured from the bag. It will harden up eventually, but I've found that it never lasts long enough for the popped, coated kernels to have the time to set up and become hard and crispy.

Easy Caramel Corn

Two bags microwave popcorn, popped

1 cup brown sugar

1 stick margarine

1/4 cup light Karo corn syrup

1 tsp. baking soda

1 tsp. vanilla

Dash of salt

Place popped corn in a large brown paper bag.

Microwave margarine, brown sugar and corn syrup for two minutes on high. Stir well. Microwave on high another minute and a half. Stir well. Mix in vanilla, salt and baking soda. It will become foamy. Stir well. Pour over popcorn in bag and coat well with large spoon. Let sit until it cools and pour into large bowl. Cover with lid.
