STIR FRY CHICKEN

1 pound chicken breast

1 tbsp. oil

3/4 cup orange juice

1/3 cup honey

3 tbsp. soy sauce (may want to use less)

1 tbsp. cornstarch

1/4 tsp. ginger

2 carrots, sliced diagonally

2 stalks celery, sliced diagonally

1/2 cup peanuts or cashews

Cut chicken into bite-size pieces. Cook chicken in the oil until not pink. Remove. Cook carrots and celery, about 3 minutes. In a bowl, mix orange juice, honey, soy sauce, cornstarch and ginger. Add this and the chicken to the vegetables. Stir until thickened. Add the nuts. Serve over cooked rice. Add Chow Mein noodles on top.
