Preheat oven to 400 degrees. Lightly grease a 2 quart casserole dish

In a bowl combine:

3 cups old-fashioned oatmeal, uncooked

1/4 cup brown sugar

1 tsp. ground cinnamon

1 tsp. baking soda

In a separate bowl, mix the following ingredients:

2 cups milk (low fat or nonfat)

1/4 cup canola oil

1 egg, slightly beaten

1/3 cup applesauce

2 cups blueberries (added later)

Add milk mixture to dry ingredients and stir until well combined. Pour into casserole dish and bake for 20 minutes uncovered. Remove from oven and fold in 2 cups fresh, canned (drained), or frozen blueberries, or berries of your choice. Bake uncovered for 15 - 20 minutes more. Serve topped with maple syrup. Can omit fruit and bake for 40 - 45 minutes. Makes 8 servings
