1/2 cup canola oil

1/2 cup granulated sugar

1/2 cup brown sugar

1 large egg, slightly beaten

1 1/2 tsp. vanilla extract

1/2 cup mashed ripe banana

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 tsp. salt

1 tsp. baking soda

1 cup old-fashioned oatmeal, uncooked

1/2 cup walnuts, coarsely chopped

Cream oil and sugars together, add egg, mashed banana and vanilla and mix well. Add flours, salt, baking soda; mix well. Stir in oatmeal and nuts. Use a small scoop to drop on greased pan or parchment lined pan. Bake at 350 degrees for 10 - 15 minutes, until edges are browned. Makes about 18 cookies. Option: add 1 cup chocolate or butterscotch chips. These were a blue ribbon winner at the Red River Valley Fair.
